The 10 Cooking Techniques Every Home Cook Should Master

Mise en place — French for ‘everything in its place’ — is the practice of prepping and organizing all ingredients before you start cooking. Professional kitchens operate on this principle entirely. At home, it means reading the recipe fully, chopping all vegetables, measuring all spices, and getting all equipment ready before turning on the stove. This single habit eliminates 80% of cooking mistakes and is the difference between stressful and enjoyable cooking.

The Maillard reaction — the browning that happens when proteins and sugars are exposed to high heat — is responsible for most of what we find delicious about cooked food. It’s why seared steak, browned onions, and toasted bread taste better than boiled or steamed equivalents. Mastering sautéing means learning to get your pan hot before adding oil, adding ingredients in the right order, not crowding the pan (which causes steaming instead of browning), and leaving food alone long enough to develop color.

A sharp knife and good technique make cooking faster, safer, and more pleasurable. The basics worth learning: the pinch grip (holding the blade between thumb and forefinger of your dominant hand for control), the claw grip for the guiding hand, consistent knife motion (rocking or push-cutting depending on the task), and how to use a honing rod to keep your knife sharp between sharpenings. A sharp knife requires less force than a dull one — meaning it’s significantly safer.

Braising — browning meat and then cooking it in a covered pot with liquid at low temperature for an extended time — transforms inexpensive tough cuts (short ribs, chuck roast, lamb shoulder) into fork-tender, deeply flavored dishes. The collagen in tough cuts converts to gelatin during the long, moist cook, producing a silky, rich sauce. Braising is extraordinarily forgiving, hard to overdo, and produces some of the most impressive home cooking possible with minimal technique.
